The Hospitality and Catering industry is the country’s 5th largest employer with over 2. 5 million working in some 200,000 businesses. It’s a very lively sector that is constantly developing and employs people in all sizes of business from restaurants and pubs to events companies and festival management groups.

 

The Careers

Hospitality and catering careers don’t just exist in traditional venues such as restaurants and hotels. Larger businesses, hospitals, cruise ships and the armed forces will all have substantial catering facilities too. Careers could be as a chef or sous-chef, baker, patisserie specialist or even a chocolatier, and include management within the sector.


Apprenticeship Standard (2) Commis Chef

Hospitality & Catering

This work based Apprenticeship is ideal for those wanting a career working hospitality and catering. You would learn in your workplace, away from your workstation and have the opportunity to use our new modern facilities here at the College and train in our commercial restaurant. You will have the opportunity to practise and embed your skills at work. During your Apprenticeship, you will learn to prepare food and carry out basic cooking tasks under the supervision of a more senior chef. The primary objective of the commis chef is to learn and understand how to carry out the basic functions in every section of the kitchen. As a Commis Chef you will gain understanding and experience in the basics which will assist in your progression to becoming a senior chef. For those without the required level of maths and English you will need to achieve these at Level 1 and take a test at Level 2 to be successful in your Apprenticeship. The course is based on realistic working practice which includes the running of a commercial restaurant, production kitchen and coffee shop, conference and banqueting facilities and industry professionals giving talks, demonstrations and development opportunities.

It will give you the chance to learn and produce a range of mouth-watering dishes so that you can impress your family and friends, whatever the festive occasion. The course will cover bread products, rich dough products, party desserts, party cakes (black forest gateau, rich chocolate fudge cake), seasonal biscuit gifts, seasonal chocolate gifts, Halloween/bonfire (parkin and flapjacks), party treats (pork pies, sausage rolls, cheese straws), Christmas puddings/mincemeat/Christmas cake design, marzipan Christmas cake, sugar paste coverings, Christmas cake/chocolate log. Professional Cookery NVQ Level 3

To gain an NVQ, you need to show you’ve got a particular set of skills. You usually work with your training provider to review your current skills and find the best way to gain new ones – perhaps by trying new things at work, or by studying. The qualification is competance based and is delivered using a variety of units to form a full qualification. You must gain 17 credits from the mandatory units: Maintain food safety when storing, preparing and cooking food Maintain the health, hygiene, safety and security of the working environment Develop productive working relationships with colleagues. You must gain a minimum of 39 credits from the optional units: If you choose the Diploma in Professional Cookery you’ll develop vital skills in food safety and hygiene and teamwork as well as choosing from a range of practical options, anything from cooking shellfish dishes to developing menus. If you choose the Food Preparation and Cooking specialism you’ll cover a range of core units in preparing and cooking meat, vegetable, fish and poultry dishes, as well as choosing your own options. each unit has a written end test
